Fire is a reaction involving oxidizer and fuel. It happens almost instantly.

Souring milk and digesting food are the same process (not a reaction), just different critters eating the food. It typically takes some period of hours or days.

That depends. Milk left outside in the sun could spoil within an hour (according to the FDA), whereas digestion is more like 6 - 8 (depending on metabolic rate, as I recall). Refrigerated, pasteurised milk has a shelf life of a few days; UHT milk is sterilised & sealed, and therefore can be stored outside for months until opening.
