I was living with my mom who was paying the rent in a previous apartment. I applied for a new apartment with my boyfriend. Will they have any need to contact my mom for anything after viewing over the ledger? My boyfriend is the primary applicant for the new apartment.

If they know it's your mom then they likely won't contact them. They would likely assume that a mom would have some bias in favor of their child. If they don't know it's your mom, they might contact them.
In general for apartments/homes as well as job interviews, assume that your references/previous employers will always be contacted. It's really not incredibly common for references to be contacted, but it's best to assume they will be.
