My uncle has been there for me all my life, my dad is about to end a trial about a boy the same age as me, the boy accused my dad of molesting him and now my father is taking it out on me. Since he has the mental age of a 12 year old, can my uncle adopt me without my fathers consent?

It doesnt matter how old you are, your uncle can adopt you at any age.
The problem is that your father has to sign off on his parental rights. It doesn't matter how old you think your father's mental age is. He is the father. Period. If he doesnt want to give up his rights you cant do anything about it. Your uncle could sue for custody but he's going to need rock solid proof that you aren't safe with your dad.
Your uncle really needs to find a lawyer who specializes in custody or adoption.
If your father is abusing you physically or emotionally then you and your uncle can report him to Childrens Protective Services or the police. You can report him to the principal of your school and by law the principal is supposed to report it.
