Can you fry fruit, e.g, pears, in sugar and water?

Hello,
I know you can sort of fry sweet potatoes in a skillet with sugar, butter and water to caramalize or candy them, so I guess you could do the same with other items as long as they are not to soft or thin. It is more of a boil than a fry. Pears might fall appart and turn into a pearsauce.

i think what you want to do is caramelized or deglazed the pear if you have water and sugar
