They won't transfer automatically; you'll have to do it manually. Don't worry though, all you've got to do is sync it on iTunes!!
Go on to iTunes and plug in your old iPod. In the top left hand corner click "file" then click "transfer purchases from iPod". Then when that is done, plug in your new iPod and say "Sync Apps" and "Sync Music" or whatever you want to transfer.
