All substances are composed of elements. There are 91 natural elements and some man made elements. Gold and helium are elements.
When elements bond they form compounds. Water is a compound.
When substances happen to be together but do not bond then they might be called mixtures. "Homogeneous" means "same kind". Air is a homogeneous mixture of gases. "Heterogeneous" means "different kinds". Lemon juice is a heterogeneous mixture of water, other liquids, acids and solids.
