If it's unopened and kept away from moisture, it technically can be kept forever. However, as soon as its opened it starts reacting with water vapour and slowly becomes less effective. I tend not to ever keep mine for more than a year. I buy it in small quantities, though, and bake often so it usually only lasts a couple of months anyway.
