Arrange to spend one day in the receiving area of a hotel or restaurant. Evaluate the receiving procedures the receiver uses. In addition, try to follow the paperwork, from invoice processing, receiving‐sheet completion, and so on, up to the end of the receiver’s paperwork duties.
