Chiropractor as a Family doctor for myself, wife and 6 month old. I have questions because?

...  I've never heard of chiropractors being family doctors until recently. 

 Do Chiropractors do wellness checkups for babies (weight, height, check stools, etc) just as a MD or a Pediatrician would do?

ABSOLUTELY NOT!  They do not have medical training and are not licensed to do that.  You would be a fool to let your baby be seen by a chiropractor insteaf of a pediatrician!  I go to a chiropractor but there is no way I'd let one act as a family doctor.
